Vegan Kale Caesar Salad

Yes, this recipe is incredibly simple, but sometimes it’s these easy 2-minute meals that get overlooked! As many of my patients know, I often recommend a dairy-free diet to address a variety of health concerns. Whether you are restricting dairy due to lactose-intolerance, a sensitivity or because you follow a vegan diet/lifestyle, there is no reason to miss out on your favourite foods! Caesar salad is a common food that people tell me they miss/crave, so here is a very simple dairy-free recipe (with a little twist of using Kale instead of the traditional Romaine lettuce).
Ingredients:
- 1 bunch of kale
- Dairy-free Caesar salad dressing (this recipe uses Daiya)
- (Although we didn’t use it for this recipe, you can make an at-home dressing fairly easily with EVOO, lemon juice, garlic, Dijon mustard and soaked cashews)
- Croutons
- (For this recipe we used store-bought, but my fav is to slice up a baguette, brush with olive oil and garlic, toast until quite crusty then crush into bite-sized pieces)
- Wedges of lemon
Instructions:
- Wash kale and let dry
- Tear kale into bite-sized pieces and add to large salad bowl
- Top with croutons and salad dressing
- Serve into bowls and add wedge of lemon to each plate
